Pulled Pork

Ingredients
  • 14 oz can tomato sauce
  • 3/4 cup applesauce, unsweetened
  • 3 tbsp maple syrup or honey
  • 1 tbsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp liquid smoke(or Worcestershire)
  • 3 tbsp whole wheat flour
  • 2 - 2.5 lb pork loin roast
Directions
  1. In a large crockpot, add all ingredients except pork and flour, and whisk to combine.
  2. Place pork roast in a slow cooker and spoon sauce over it. Meat won't be covered completely and it's OK. Cover and cook on High for 3.5 - 4 hours or on Low for 5 - 6 hours.
  3. Remove meat from slow cooker and shred with 2 forks.
  4. Add flour to the slow cooker and whisk to combine. Return meat to slow cooker. Stir to combine. Cover and cook for another 15-20 minutes.
  5. Serve warm, on a bun with your favourite toppings or on a bed of brown rice/quinoa. For a low carb option serve with salad.
