Sausage & Kale Soup
Ingredients:
-1 lb of Organic Sausage (I prefer the Greenwise hot italian)
-1 bag of Kale (2 bunches of kale)
-2 whole white potatoes
-one onion (sliced)
-1 clove of garlic sliced
-2 cups of low sodium Chicken Broth
-1 cup of 2% milk OR 1 can of coconut milk
-1 lb of Organic Sausage (I prefer the Greenwise hot italian)

Steps:
Sautee your onions and garlic on medium heat for 8 minutes or until translucent. Next brown your sausage. While your meat is cooking add your chicken broth and milk to your crockpot. Turn it on LOW. Wash and dice your KALE, add to the crock pot. Next slice your potatoes and add to the crockpot. Once your meat is fully cooked add to your crockpot and turn on LOW for 8 hours OR HIGH for 4-6 hours if need to make it fast.

If doing the 21 day fix this counts as ONE red, ONE green, ONE yellow (cornbread) and possibly two yellows if you do ADD the potatoes to your serving. I left the potatoes out of mine, but added them to my husbands.

*you could also add some sliced turkey bacon for extra flavor!
Cornbread Ingredients:
2 ears of corn
1 cup of cornmeal
1 cup of oat flour
half a cup of 2% milk
2 eggs
1 teaspoon of baking powder
1/4 cup of applesauce
Steps:
-Remove corn from ears. -Combine ALL ingredients in bowl, mix well. -Pour into 8×8 baking dish. Bake at 350 for 30 minutes.
Serve with favorite soup! and Enjoy!
