Ever Find Yourself in a FUNK?!?

Last week we took Jax on our first ever family vacation outside the country. We travelled to the Bahia Principe Resort in Mexico(for the week of my birthday!) We had a blast BUT travelling with a three year old meant waterpark and pool ALL day and all of us in bed by 9pm. I think we need a vacation from our vacation BUT needless to say we definitely made some memories and had a GREAT time! 



We got in our workouts each day and our food was OK. We enjoyed ice cream daily and some drinks....now that we are home it's back on track with our goals. 

I definitely noticed the decrease in energy and feeling like I want to do NOTHING. Which reminds me exactly why I love these online accountability groups with giving me exactly what I need to do in order to feel energized daily and sleep GOOD! 

So for this week I created a meal plan for both of my groups to follow AND one for myself....to show them how easy it can be to make some fun meals at night and keep things easy for during the week lunches. 

One of my FAV recipes is the Oatmeal Bake. We serve it warm with a tad bit of Maple Syrup drizzled on top. 

This week brings us into the LAST 4 weeks of the program we are doing! I am excited to get BACK on track and feeling like myself AGAIN!!!

My goals for this week are to get my workouts in EVERY morning before Jax wakes up, focus on getting ALL my water in and stay the course with my meal plan!

Oatmeal Bake

2 cups  rolled oats
1 teaspoon cinnamon
1 cup raspberries (Any berries work).
1/3 cup blueberries
1/2 cup mini chocolate chips(optional)
2 cups Almond Milk
1 large egg
2 tablespoons vanilla extract
1 ripe banana, peeled, 1/2-inch slices

Method
1. Preheat oven to 375°F and generously spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet. If you do not have that size-baking dish, a 9 by 13 pan is fine, will be a bit thinner, but just as yummy.
2. In a large bowl, mix together the oats, cinnamon,  half the berries and half the chocolate. (Save the other half of berries and chocolate for the top of the oatmeal). In another large bowl, whisk together the milk, egg, and vanilla extract.
3. Add the oat mixture to prepared baking dish. Arrange the remaining berries and chocolate on top. Add the banana slices to the top then pour the milk mixture over everything.
4. Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set.
5. Remove from the oven and serve with a drizzle of Maple Syrup
