Eating healthy is something that can become boring fairly quickly. Chicken, Fish, Eggs, Veggies and Fruit....all sounds great when I read it, but when I constantly am sticking to these main areas, I quickly become bored and fall off the band wagon because I want flavour!
Branching out and purchasing recipe books is the only thing that is saving me. I know as a mom and a wife, that I want to be healthy. I want to feel healthy, I want to be happy. When I binge eat on all the sugar and fried foods I KNOW it bloats my stomach, I feel crummy and it becomes full cycle and I complain about how I look and feel. Chris will quickly remind me that I know what I need to do, I just need to do it.
Instead of focusing on the BIG picture and where exactly I would like to be, I break it down in to small attainable goals. Right now my goals are simple to workout 5 days a week and to focus on incorporating recipes into my healthy cooking.
Now I am not a chef by no means...I have struggled FOREVER in this area. I remember when I was younger and I would bake on Sundays while my mom was working. Often it was burnt or not moist enough, heck there are SO many stories about my baking...just ask any of my family members.
This morning I tried a new recipe for Breakfast!
Apple Streusel Egg Muffins:
3 large green apples-chopped
3tbsp warm water
2tsp cinnamon
9 eggs
1.5tbsp of butter or coconut oil
3tbsp coconut milk
1.5tbsp of coconut flour
1/4tsp of baking soda
pinch of sea salt
Preheat over to 350F
In a medium skillet, saute the apples, water and 1.5 tsp of the cinnamon until the apples are the consistency of chunky applesauce or apple pie filling. Allow the mixture to cool.
In a medium sized mixing bowl, whisk the eggs, butter, coconut milk, coconut flour, 1.2 tsp of cinnamon, baking soda and salt until well combined. Add the cooked apples, reserving 1/4 cup for a garnish.
Spoon egg and apple mixture into lined muffins tins-1/4 cup each. Gently spoon about tsp of the remaining apple mixture on top of each muffin.
Bake for 40mins.
Now these little guys were delicious and Jax ate them up just as fast as anything else he loves. A keeper in our books for sure!
