I spend hours upon hours sifting through recipes on Pinterest and always looking for new ideas, why not begin to share my findings on my own blog.
One of my challengers in my challenge group initially posted about these delightful little cakes, but I didn't try them until more recently. I am one of those people that will often "pin" something with full intent to make it or create it and never do.
With embracing a lifestyle change for not just myself, but my family I have started to put healthier recipes into practise and this recipe being one of our favs.
Gluten free and dairy free, the recipe offers endless options to flavour it up or leave it the same.
I hope you enjoy them just as much as we all do:)
Two Ingredient Pancakes:
4 Eggs
1 Banana
1/4 tsp Baking Powder(optional)
1. Combine all ingredients in a bowl
2. Pulse in a blender, with a hand mixer or even a food processor until there are no clumps
3. Heat a frying pan over medium heat, add a little EVOO or non stick cooking spray
4.Cook pancakes until they begin to bubble on one side and begin to take form. From there flip them and cook for 30 seconds longer
5.Serve with Maple Syrup or have them on there own
OPTIONAL: For an added treat toss in some chocolate chips, cinnamon or frozen/fresh fruit:)
