Dinners Ready!

Dinner can be my BIGGEST struggle when it comes to staying on track with our fitness program and goals. I KNOW I start out each week with a Meal Plan and the nice thing about having it is if I don't necessairly feel like having what is on the menu that night, I can switch the week up!!! Which is exactly what happened last night!




I decided to go with our Spaghetti Squash night but to LIVEN it up a bit by doing a Stuffed Spaghetti Squash! HELLO, this was absolutely delicious! Chris enjoyed it, Jax ate as much as any 2 year old would eat at dinner time and we had some leftovers for lunches today!

HERE'S the recipe that I used!!!!

1 Spaghetti Squash
1 jar of pasta sauce(I used Fixate Pasta Sauce)
1lb ground turkey
Chopped green onion
Shredded Cheese

1. Slice squash in half and clean out the seeds etc.
2. Place face down in a pan with some added water for moisture
3. Bake for 45mins at 400F
4. Brown the ground turkey on the stove top
5. Once cooked add in pasta sauce
6. One the squash is cooked, flip over and scoop filling into the squash
7. Sprinkle with green onion and cheese
8. Bake 10mins to melt the cheese

And SERVE!

We had ours with a side salad of mixed greens, a few nuts, some green onion and vinigarette dressing!
